SPRING COOKING CLASS
The Castle Hill spring cooking class embraces a meal that is very personal to Executive Chef Lou Rossi. This session will feature the region in Italy that Chef Lou’s family immigrated from, Le Marche, Italy. The cuisine in this region is diverse as it borders the Adriatic Sea to the east, and Umbria to the west where seafood, various meats and egg-based pastas are plentiful. He will guide guests through a weekend of Italian classics, including Cierchiata, Lasagna Vincisgrassi, Olive all’ascolana, Porchetta and Brodetto. Pastry Chef Matthew Petersen will teach a hands-on class on how to make Tiramisu. And what would a weekend enjoying such delicacies be without wine pairings? Beverage Director Anthony Boi will lead a tasting of various wines as well as some interesting new selections to work into your day to day routine.
